In my bakery…I use environmentally friendly cleaning products, utilize recycled, recyclable, or biodegradable packaging and *only* work with pure, whole ingredients.

I am passionate about supporting my local community and use organic and /or local products whenever possible or in season 100% of my baking is done from scratch.

I don’t believe that quantity should ever come before quality, or that cruelty or pollution need ever play a part in creating great food. Pure foods and strong community are an integral part of both my personal philosophy and my business practices. In 2008 I was a *National* Sponsor of Farm Sanctuary’s ‘Walk for Farm Animals.’ This is an annual fundraiser that raises funds for rescue, education and advocacy work for animals on factory farms.

I don’t believe that people on restrictive diets should have to compromise taste or style ~ and my allergen-free or vegan products rival my traditional pastries in both presentation and taste.

The quality of my products comes not only from the sourcing of my ingredients but the passion I put into each and every one of my creations.

My philosophy is no cutting corners, because you deserve the very best.
